Zendesk to Jira field mapping with uneven dropdown options

I'm looking to map out an additional dropdown field in Jira with 12 selectable options (think numbered system like 1, 2, 3, ...11, 12) to my Zendesk dropdown field with three options (think High, Med, Low).
Can this be done?  If so, which program do I configure that options 1, 2, 3, 4 = Low, 5, 6, 7, 8 = medium, etc. ?

This is Majid @ Exalate. 

This could be done via a scripting solution using the respective API calls on both systems. Or you can go for an out of the box solution like Exalate that would allow you to create all these mappings in seconds.
