Want popup selection, or button redirection for automation

Okay, Jira NOOB here.  We are on the hosted platform using the next-gen project.  Here is what we want to do: 

When a Request Type "email" comes in, we have a very restricted workflow and have set up a "remind people to update empty fields" rule requiring them to choose an assignee.  Next, I would like to automate the popup of the "Change Issue Type" window or something similar.  Meaning, all email tickets have to be changed to some other ticket type.  I've only been successful in getting them to change to a specific type, not a user choice.  How can I accomplish this?

Hi Greg - First of all, you are not going to be able to accomplish all of that with Next-gen projects. You will need something much more flexible like a Classic Software Project.
