This is probably a setup issue. I setup a mail server using my gmail account within JIRA Incoming mail..I setup a profile and mail handler...Yet, when I send email to the gmail address, JEMH does not create an issue...Please help

Don't use a registered JIRA user for inbound mail as notifications create a mail loop.
Create a JEMH Test Case, set the From: address to be you@yourplace.com then set the To: to be test-inbox@yourplace.com and put that as a catchemail address. Use the Test Case, validate issue creation.
Next. Get a mailbox that isn't associated with a JIRA user, and setup that as the incoming address.
If you have any problems beyond that, please spell out by example what an example mail looks like recipient wise, what your catchemail is, what addresses are related to JIRA account holders.
tip: check your instance for multiple users sharing the same address. JIRA will pick the first, so the user may not be who you think, the permissions etc.....
