I have a question regarding the export to Excel, 
How can I include additional fields beyond the basic ones provided by default ?

Hi,

The exporting mechanism always exports with all the settings you have on the screen when exporting. If you, for instance, zoom in our out, the Project export will also be zoomed in our out to match. The same goes for columns, meaning that any column you have on the screen will be exported: https://softwareplant.atlassian.net/wiki/display/BIGPICTURE/Columns+and+Perspectives
