I'm currently trying to set up a rule in Automation to transition cross-project linked issues for automatically transitioning the issue status when the linked issue from the other project has been manually transitioned.
As an example, let's say I manually transition an issue from To Do to In Progress in one project, I want the linked issue in the other project to be automatically transitioned from To Do to In Progress.
I've been searching for a few days and I can't come up with a solution.
The part I think I'm blocked with is getting the current status or transition action from the other project. I can't find an option to choose a ticket from a different project or even see them.
All suggestions are welcome.

You should be able to achieve this with Automation for Jira: https://www.atlassian.com/software/jira/guides/expand-jira/automation
You can simply create a global rule like this:
