When using the Connector for Salesforce and Jira app, is it possible to create a Jira Task when a Salesforce Opportunity status changes to Awaiting Order?

Have you explored any rules in Automation? There's an action there for creating issues, you'd need to find whether you can activate it with a trigger from Salesforce, perhaps with a webhook.
Also, have you tried asking the ServiceRocket support team?
Thanks Capi, I've reached out to Service Rocket Support Team, who advised this is possible through the use of Apex triggers in Salesforce.
