what is the difference between history and activity for an issue?

i cant understand the difference between these two section, why some changes shows in both sections and some others just list in history

History is everything that is changed in an issue. 'Activity' will show only recent ones and it is not just about changes on the issue. It will show anything related to the issue, including activity related to the issue in linkes applications like Stash, Bamboo etc.

If you want to check issue field changes, use History tab.

To add, History won't show comments that accompany changes.

For example, if you make a state change that give a popup to supply a comment, History would only show that the state changed, while Activity would show both the state change AND the comment that accompanied it, clearly grouped to let the view know these two things (state change + comment) happened in tandem.
