make not editable field

I want to restrict edit action to some fileds

How can I set this?

Build-in solution - delete these fields from edit screens.

If you need to allow editing after creation by some users I suggest creating a role for that and then put the fields on a transition screen designed for that purpose and restrict the transition to that role
