keep track of Version Release date changes and also who changed it?

We have multiple projects running and it becomes difficult to track the release date changes done by product owners without intimation to the Agile Team.

Is there a way to keep track of these version release changes done by someone?

There are add-ons for JIRA that capture every sort of changes for audit trails. Those could eventually log the "release date changed" events, as well.

Go to Atlassian Marketplace and run a search for "audit" or similar.
