changing original estimate is not adjusting the remaining estimate value

Indeed. This is intended behaviour, as you should not change your original estimate anymore once you started work on an issue. Changing your original estimate automatically makes it not your original estimate anymore, but an updated estimate.

So once you started, only update your remaining estimate. If you spend more time than originally estimated, so be it. That's part of the learning process of estimations. But track remaining time using your remaining estimates, not by manipulating your original estimates.

On a side note ... as long as you haven't started work, just clear the value of your remaining estimate while editing the issue. JIRA will then align Original and remaining estimates as you save.
