can't add an issue due to information message

when I try to create an issue, I get an information message: Insureon: Insureon is required (Insureon is one of our projects)

I recently added some custom fields to JIRA if that has any relevance

That sounds like you have added a custom field called "Insureon" and made it mandatory in the field configurations.

If you do need it to be mandatory, then you need to add it to the create screen and fill it in.  If you do not need it to be mandatory, then go into the field configuration and set it to "optional".
