can I create 2 different sprints

This question is in reference to Atlassian Documentation: Creating a Sprint

Within a project, I have create 2 different boards.. but can I create 2 concurrent sprints (with different dates) in these boards?

You can create different sprints on different boards and run them in parallel. And if you have same issues, due to filter configuration, on both boards, the sprints from one board might appear on the other.

If you want to run different sprints, created on the same board, in parallel, you can enable parallel sprints under JIRA Agile Labs.
