Where do the "keys" in the JIRA email templates come from?

I'm very new to the admin side of JIRA, so please excuse this (most likely) very simple question.

I'm working on editing a few of the email templates and I see "keys" being passed to methods and directives (ex. "issue.field.assignee", "common.concepts.key", etc). My question is where do these keys come from? I'd like to know so that I'm aware of the potential keys I can use in the templates.

Thanks for the reply.

My question has nothing to do with Service Desk, so unfortunately your answer isn't applicable. My question is regarding the keys that are in the default, "out of the box" email templates that come with JIRA.
