You do not need to do both.
However, they do different things, and it's worth explaining, so you can choose which option is better for you.
- If you remove a field from a screen, it still belongs to the issue and can be seen and manipulated on other screens. You can report on it, search on it and so-on.
- If you hide a field in the field configuration, it will be totally hidden, you'll never see it on that issue type, even if you put it on a screen. You won't be able to search for it or report on it (Even if it has data before you hide it)
