What's the difference between the sprint End Date and actually closing the sprint?

When you start a sprint, you can specify the sprint starting date and time and the ending date and time. If a story isn't done by the sprint end date and time specified when you started the sprint, is that when JIRA will consider it not done or is the date and time that you actually close the sprint using the Close Sprint button when JIRA will consider it not done?

From what I've tested, The dates that you assign to the sprint will essentially determine everything that is visible in your reports while it's still active.  Once you close your sprint the end date will automatically be adjusted to match the actual time the sprint is closed.

As a result the time at which a story is finished will be correctly be reflected in your reports as long as your sprint is closed.
