What happens to test executions that include an x-ray test case that has since been changed to an inactive

first: welcome to the Atlassian Community.

Regarding your question, usually (and talking about manual test cases), the execution is kind of a "snapshot" of the current data. So if the data changed, after the Test Execution was created, the old data is still visible due to transparency. But Xray will provide you a button to load/merge the latest data into the execution or reset the execution of already executed. 

From a reporting perspective, the inactive test still counts toward your coverage, but there is an open request to have a configurator which status counts for the coverage: https://jira.getxray.app/browse/XRAYCLOUD-1929
