What are the impact on Sprints and Filters if the associated Project is deleted in JIRA?

The above information is required, since while migrating the project from one Jira instance to another, we first deleting the project in Instance A & then importing the Project from Instance B to Instance A.

The filters will be broken. You will have to remove the project from the filter manually. Sprints are not directly linked to projects but the board filter will also be broken.
