How can I hide particular issues from the partner from service desk portal?
I want to hide them since they are escalated and I don't want the partners to see them at all.

You could try using a security scheme: https://support.atlassian.com/jira-cloud-administration/docs/configure-issue-security-schemes/
Create an issue security scheme for your service desk project with a security level "Internal" and assign it to a group or a project role in which only your team is included.
To use it, add the Security Level field to the edit and/or create and view screens. When you create an issue that should not be seen by the customer choose the Internal option from the drop down of the Security level field.
