User picker field for digital signature (read only after filled in)

We want to use the user picker field for a kind of digital signature. is it possible to create fields that can only be writen once and never changed again?

Sort of - if you put a field on the issue VIEW screen, and the issue CREATE screen, but not on any edit or transition screens, then a user can set it during issue creation and never change it again. Or, if you don't need it on create it, you can easily just use it on issue transitions. The important thing is not to put it on the EDIT screen.
