Good question and the simple answer to the noted upgrade path is a yes, you can upgrade from 7.10 to the latest Jira version 8.5, or any of the interim versions, but there are some additional complexities that could change that to a maybe or a no because of customizations to the container or variable options of the install.
Things to verify would be the compatibility items such as database version compatibility. As one example that you could run into in DB compatibility would be where jira 7.10 could be using a PSQL 9.3 DB version but on Jira 8.5 the minimum PSQL version would be 9.4, and you could run into upgrade task failures on DB incompatibility.
But overall I would recomend looking at out "Upgrading Jira applications" Documentation particularly giving extra attention to the following Sections that go into more detail on the items to check as well as test environment options options:
