Are you working in Jira Cloud or in Jira Server/Data Center?
If you are working in Jira Cloud, are you working with a Company Managed project or a Team Managed project?
A board is just a way to visualize and manipulate issues in 1..n projects. You do not have to restructure your project to change from using a Kanban board to using a Scrum board.
If you are working in Jira Server/Data Center or working with a Company Managed project in Jira Cloud then, as @Mikael Sandberg said, you just need to create a new board using the same filter as the original board, but selecting a Scrum board instead of a Kanban board.
If you are working in Jira Cloud with a Team Managed project and you are an administrator for the project, then you can change it from Kanban to Scrum under the Project Settings > Features option, where you would turn on the Sprints feature.

All you have to do is create a new board, and select it to be a Scrum board and associate it with the exiting project.
