You can create filter like as below ,
project in (FR,projectname) and issuetype in (Task,Bug) and status changed before -7d and assignee = currentUser()
note : you can change project names and issue types as per your requirement.
After creating filter you can subscribe to your team or jira-users.

You can use scheduled automation. But it will send separate mail for each ticket.
and in add component, you an choose new action and send email. so mail will be sent you assignee with the given details
