After we change from one flow to the next we'd like a prompt to come up asking for some data to be filled in and maybe even automatically filling in date/time on when that status was changed from 1 to the next. Is there a way to do such a thing?
If you install the jira-suite-utilities you can make the fields required during the transition. There is no way to do it after the transition. You can't use scripting in the cloud. You can use a post function to fill in the date time in a custom field. I do it for all the milestone events. The trick is to put the copy Updated field to your custom field AFTER the update action in the post functions. Otherwise you will get the last date/time it was updated, not 'this' one.
