We are going to outsource a large number of JIRA issues to another company, and I was wondering whether there was a way to do it at all- Moving issues from our JIRA instance to theirs.
We are just hoping there's a way that wont's force us to recreate everything from 0 for their JIRA installation.
Any ideas?

You could use Back Bone Issue Sync for Jira. The plugin can synchronize issues between different Jira instances. It can synchronize by HTTP, email and files.
