Hi,
Is it possible to work out a count of the number of times a ticket was updated or edited?
We do not use JIRA cloud and limited with plugins. Any suggestions?

welcome to the Atlassian Community!
The high-level would be to have a listener in place which listens to an "Issue Updated" event.
As soon as this comes along a counter in a custom field you can name like you want to is increased by "one".
This also can be applied if you want to add edits - or you have it separated for edits/comments.
Without Apps this is not possible as far as I know. An App that provides this will be required I fear.
