I assume activity type is a custom field.
My first reflex would be to go in the custom field and check
- the context of the field (whether it is avl to project in which u r exporting)
- whether it is available to all issue types that are included in the export
If any of the above is false, the field will not appear.
Another use case, where the required field wont get exported to excel ie. when you have None selected as an option for the custom field.
