We are planning to have one jira project for our only product (as some may say is correct). But I don't know if one project can have multiple sprints in parallel. We are using components to categorize different platforms for our product (Android, iOS, Web, Windows, etc).
Now, in 2017, is there a way to have multiple sprints running in one only project? Will the team be able to create a dashboard to see only their issues in sprint?

You can have multiple active sprints active in the same project: https://confluence.atlassian.com/jirasoftwarecloud/using-parallel-sprints-797737030.html
And you should be able to search based on Component / Users / Teams to see issues just in the specific team's sprint.
