Mail Handler - Outlook

I am trying to setup a mail handler to handle the HTML emails that JIRA sends to all watchers on the ticket when a comment has been made. We are using outlook to handle all emails. When we reply back to these emails it is in HTML format. We automatically put our signature at the bottom of all emails. How to do I capture the items before an email signature?
