The biggest concern I see with not being on a supported version is you won’t get support from Atlassian in case you need help. If you need help, they will make you upgrade to a supported version before they will help you. In addition to that, there are potential security vulnerabilities that may be there to exploited.

In addition to what Edwin said, you will also find that some of your marketplace apps (add-ons/plugins) will no longer receive updates for new functionality, as marketplace vendors also remove support for older versions of Jira.
