If you activate the logging through JIRA UI, you can restart JIRA to disable it. However, if you activate the logging by modifying the log4j.properites, you need to modify back the file then restart JIRA before it take effect.
In any case, I recommend you to check on your log4j.properties and see if the logging is still active or not.
