I am creating a project plan based on my release creation and adding my stories and epics to it.
The problem is when I am releasing a version all issues including my project tasks are added to the release notes.
I want to exclude the project planning issues from the release notes.
How to configure this?

Unfortunately there is no easy way to exclude project planning issues from the release notes using the out-of-the-box Releases feature in Jira.
However, if that is a requirement and you are looking for more flexibility, you might want to take a look at third party apps in the marketplace.
Released for example allows you to create release notes for a specific version and specify which issue types to include, or apply any other type of filters for that matter.
Beyond that, you can define templates for your release notes and let the AI generate the content based on your issue titles and descriptions.
You can also publish to Confluence, Slack, your website, your app and more.

Just to state the obvious. One way you could do it with the out of the box versions, is by removing the project tasks from the version before releasing. But I assume that's not what what you were after.
