So let's say that on the subject of the email the customer wrote the component of his support case, is it possible that when an email arrives, JIRA will get and set the component field?
JIRA has "mail handlers" which process incoming mail. They do not currently have one that sets fields like that.
There are some in the marketplace which can do this, and a lot more. The two that spring to mind are JEMH and JETI, but thre may be others. It's also possible to write your own.
