Is there a way to hide assignees that are no longer on the project rather than delete tickets?

I have created a dashboard to display assignees to the tickets to show workload.  As people move on, is there a way to hide the folks no longer on the project vs. deleting their tickets and then the account fo we have an audit trail?

Never delete tickets. The forum is full of people looking to get them back. It will bite you eventually.  

And don't delete users. JIRA uses a pointer to their account to put in the name so when you view the ticket you'll get an sql error trying to resolve the pointer.
