you could probably do the trick by setting all those values (label and default values) as post-functions of a transition.

Another way that could be worth testing would be the use of Automation plugin  (tutorial/blog post : automation-update-jira-issues-automatically )

He cannot use post functions since he needs this during a normal edit as well. And he cant go for such plugins since he is working in a cloud instance.

Either an automation (status change) or while editing the issue. I have checked the automation and it seems I have somehow limited options. I am trying to find a way if there is already one readily available. Thanks!

This requirement should work during a status change or in normal edit conditions as well?
