Is there a way to automatically assign an issue to specific fields (like priority, security levels, etc) when it's assigned a specific field? For example, when an issue is set to a label (e.g. TechnicalRequest), it would be set to priority Low and security level to a specific project role?
you could probably do the trick by setting all those values (label and default values) as post-functions of a transition.
Another way that could be worth testing would be the use of Automation plugin (tutorial/blog post : automation-update-jira-issues-automatically )
