Not "undo", but you can simply move it back to where it came from. It'll take a different ID on though.
So there is no way at all to go back to the previous project with the same ID/issue number it had? Just seems like there should be a way to undo a mistake?

No, moving an issue is complex, and re-inserting it back where it came from potentially more so. There's no real benefit to it either, so Atlassian haven't bothered.
