Is it possible to deactivate the mapping between mail priority and Jira priority ? I always want the defailt priority for all issues created by mail even if the mail has a flag "importance : high" in its header.
Not possible with the built-in mail handlers unless the priority field is not visible (see JRA-7646). You can create a custom mail handler as shown here (basically make a copy of CreateIssueHandler and apply the changes needed. Alternatively you may search for some add-ons that support it out of the box.
