If one person updates at the same time will Jira overwrite?

I have had a couple of situations where two people have edited the same issue at the same time (I believe) and it deletes what one of them has entered. Is there anyway around this?

No, there's no way around it. Jira doesn't have locking or conflict resolution.

You'll find the first commit is overwritten by the second, unless the first commit makes a change that changes the security such that the person doing the second commit no longer has the right to do it.

We have dealth with this in the past by creating custom fields which will lock the editing or throw validation errors if someone already aquired the lock. But this is not an option in onDemand as of now.
