If I purchase the servicedesk add-on for Jira in the cloud, will that impact/disrupt any existing workflow or setting?

The direct answer to that is No.

JIRA Service desk has it own workflow.  We moved to JIRA Service Desk about 6 months ago.  The roll out was very smooth.
