Identify business owner

My business owners are not Jira users so I do not have the ability to assign them in the users & roles of a project. Is there another field that I can use so that I can assign business owners to each project? 

I can always create a field and then autopopulate that custom field every time an issue is created, but that seems a bit much.

Not at a project level, unless you install an add-on to provide such a field.

You could just put their name in the project description field though.
