If you don't have many projects, copy and paste could be an option. 

https://yourinstance.atlassian.net/jira/settings/projects/manage 

^ from this page, you can get a list of projects

What is it that you are trying to achieve? Could you create a dashboard in Jira to give you an overview of all of the projects without needing to export, and then keep updated, the list of projects?
