Hi @maarten soels and welcome to the Community!
Are you talking about a dashboard or a scrum/kanban board? In both cases, issues are displayed based on a filter in the first place. If that filter applies criteria to your source data, that may already explain why you don't see all. So locate that filter and see what it does.
Both dashboards and boards then visualise the data from a filter based on additional attributes, like issue status, whether you are looking at the backlog view or an active sprint, ...
It might help us help you if you could share more details of your configuration.
Hope this helps!
Ah, ok. Those are only the issues in your DONE column on your board. Older issues are hidden automatically after some time and issues in other statuses are not displayed in this column.
If you want to see older issues in the done status can be retrieved if you search for them in e.g. the issues view. They are hidden from the board as they do no longer require work and keeping them on the board makes the time to load the board view longer.

Can you share some more context and screenshots of what you see.
By default using a dashboard and a gadget on a dashboard, the default item viewed is 10 issues.
There should be a page number bar with errors on the bottom, to move to next pages.
A dahsboard filter gadget can show max 50 issues on a single page.

You are talking about a kanban board, not a dashboard.
Are you using a team or company managed project?
In a team managed project the board view settings for "Done" issues is not configurable and "Done" issues will be removed from the board view after being in "Done" for 2 weeks.
The issues are still in Jira, just not visible on the board.
If you use a company managed project the board is configurable and you can determine the amount of time "Done" issues are on the baord.
The options are:
The disadvantage of Always would be, readability and performance in loading the board

You don't need to export and store them.
The issues are still in the Jira application, just no visible on the kanban board.
AS @Walter Buggenhout mentions, you can still search for them an view them.
