I do not want customers to see other projects than their own, how can I limit access to the help center?

With the recent organization feature we released, the recommended way is to group your customer by organization, then set security level of your JSD project such that only customers in specific organization can raise request / see each other requests. Have a read more of our organization and project security settings docs:

You need to wok with Project Roles and Permissions.

If you have integrated your AD, then your AD users and groups works excellent.

Ex:- If you have multiple customers who need to access different permission for diff projects, you can well organize and achieve it by working with Project Roles and Project Permissions.

Set the right users or groups to "Browse issue" permission scheme to get this done.
