There are many ways. See answers before.

You can also use Misc Workflow Extension Plugin. Use copy field to Field function (from updated to your field) and put the Post function just after the postfunction 'Update change history for an issue and store the issue in the database.'

JIRA Suite Utilities would be able to update the custom date field via workflow post-function transition. You can have a look in their documentation to find out how to get it done.
