Can you maybe share what seems to be an issue? Is the "Priority" field not visible or you just cannot edit it? Also, are you using company-managed or team-managed project?
Additionally, are we talking about the default configuration of the project or is it customized (e.g. via permission schemes, workflow properties, etc.)?
Btw, could you share the video tutorial you've followed to set this up?

The priority icon will be displayed by default either when looking at the project backlog or the issue view/list of sub-tasks under the issue.
Note that this video is 5+ years old and there have been some UI changes together with rolled-out features and improvements, especially when talking about cloud.
When looking at the cloud, you can change Priority directly from the backlog list of issues by clicking on the icon and changing the value.
If looking at the issue view and sub-tasks under the issue (see the right side of the screenshot above), you will need to open each sub-task individually and update the value on the sub-task itself. To do that, the selected sub-task type needs to have a Priority field added to the issue layout. You can configure the issue layout (if you're a project or Jira admin) by navigating to the issue and on the right bottom side, clicking on Configure. Then in the layout configuration page, add the Priority field to the description or context field area.
Lastly, I would recommend checking the official materials and courses in Atlassian University. Specifically, you might want to take a look at Configure software projects to support team efficiency . These materials are often updated and contain really good step-by-step guides (or links at least) on how you can configure Atlassian products.

If you're on a paid plan, I would suggest reaching out to Atlassian Support and you can grant the support team access to your instance so they can check what's going on.
