How to know whether a custom field/ work flow/ issue type was ever used or not ?

Hi all. We have so many custom fields, work flows and issue types in our system. Due to this we are experiencing performance issues. Can someone provide the sql query to know custom fields, workflows and issue types that are never used. We want to clean up our system. Any sort of help is appreciated.
