How to change project type (SCRUM, KANBAN...)

How do I switch the type of project - meaning from scrum to kanban to simple software?

The project types are just pre-defined project templates to make it easy to get you up and running with JIRA, it does not mean that they are just Scrum or Kanban or Simple software projects. If you look at them you will see that the difference is the default issue types and workflows, but you can always modify that after you have created the project.
