I would like to filter my JIRA issues related to a Service Desk project by the "Channel" field (Portal/Email/Jira) but I cannot see it among the fields listed pushing the "More" button.
You can use the "Advanced" search mode with JQL instead of "Basic" mode and filter by "request-channel-type".
E.g:
request-channel-type in ("jira", "email")
or:
request-channel-type = portal
