Mail was sent to the Service Desk as plain text, JIRA then lodged a ticket, but changed the text in the ticket as follows:
A config file was pasted into the email content, it had hashes (#) at the start of some lines - Jira 'helpfully' converted these to a numbered list.
Similarly lines starting with "--" seem to be converted to strikethrough.
How do I stop JIRA from doing this and put what I sent in my email into the ticket?

Unfortunately, there's no setting for that - it's essentially your email content being rendered as "wiki markup". An alternative would be to have the sender of the email wrap their text in a \{noformat\} block.
Thanks, I figured that was the case and we have now trained our staff to use the noformat block, which seems to have had the desired effect.
