I know this is a noob question but I'm adding new people which defaults to them being able to see all my projects. When instead I only want them to be able to see the one or more projects I assign them to.

A common mistake is to use the JIRA's default user group in the project permission scheme. That gives permission to everyone in all the projects, until the project gets a more restricted permission scheme.
It is advised to modify the default permission scheme to grant access only to project roles and start using the roles in individual projects.
